Meal planning will streamline evenings in the home.

Parents are saved money, time, and mounds of frustration because they know what the brood’s having for dinner, days ahead of time. There’s no scrambling in the kitchen or supermarket, since both shopping and cooking are refined practically to a science. Kids (sometimes) get to have a say in what they eat, too, which makes the whole thing a family activity rather than merely a parental chore.

All in all, it’s a fantastic strategy. Even better, EVERYBODY can use it.

Monday:  Turkey Taco Quinoa Bake                        
Tuesday:  Baked Kid-Friendly Chicken Tenders                  
Wednesday:  Greek Salad with Feta & Grilled Flank Steak                            
Thursday:  Grilled Chicken Sausage & Vegetables

Sunday:  Creamy Slow-Cooker Mexican-Chicken

Having a MEAL PLAN is the answer.  I have been doing this for years, and it has helped me tremendously.  Not only to lose weight and live a healthier life, but to eliminate meal-time STRESS. 

You'll end up with more time to savor meals with less time wasted in the kitchen.  And, you'll save money on your grocery bill by not wasting food that goes bad in the back of your fridge (or is spent on last-minute take-out)!

Weekly Meal Plan: 3/16/15 - 3/22/15 AND What's Next?

Well, Week #2 of the 21 Day Fix Extreme has gone without a hitch.  Still digging the workouts, still feeling plenty of soreness, and still thankful to get back to my weights! 

SO -- what is next?  ANOTHER round of 21 Day Fix Extreme!  Since I've loved the program and have been seeing such GREAT results:  both personally AND from my online accountability group participants!  (If interested, see the details at the end of this post.)

Weekly Meal Plan -- 3/9/15-3/15/15

Well, I've wrapped up the first week of 21 Day Fix Extreme!  I have to say -- I love, love, love these workouts!  I have really missed lifting weights, especially with doing Insanity Max: 30.  My body responds so well to weight-lifting and its been great to get back to it.

I won't really be weighing or measuring myself (I don't think, anyway) until the end of the 21 days - so stay tuned for my results.

A funny fact for you:  Did you know that I never before made it past Day #5 with the 21 Day Fix nutrition plan?  I was a 21 Day Fix failure! 

I don't know why - I just had a lot of trouble sticking to the food plan.  And, it wasn't the plan itself -- it was ME.  I just wasn't "ready" .... ready to commit to it 100%.  This time, I am READY.  My accountability group is also helping to keep me strong, along with the help and support of my two wonderful Coach friends who are doing it alongside me.  We message each other frequently during the day!  That accountability and support make all of the difference.  "Build a fortress of accountability."

Weekly Meal Plan: 3/2/15 - 3/8/15

First Week of the 21 Day Fix Extreme ----> Coming Up!

Except that it is NOT one week away -- it begins TOMORROW!


I am nervous and excited to start this program.  Nervous because my nutrition still needs some work.  Excited because I know I will see great results when I stick to a fabulous eating plan with no deprivation AND excited because I need weight-lifting back in my life!  My body responds SO WELL to the weights and I can't wait for that part.

I will also be doing SHORT daily videos about my thoughts, my progress, my food, and my workouts during this 21-day journey.  Be sure to check them out daily on my Facebook page.  YOU ALL can help to keep me accountable to this program, too.  Accountability goes both ways:  my online groups need me, and I need THEM.

Weekly Meal Plan: 2/22/15 - 3/1/15

One of my favorite things about planning our meals for the week ahead? 

If you go to the store, ONCE during the week, with an organized grocery list and meal plan, you never have to stare into your fridge wondering, "What's for dinner?" or resort to take-out!

AND, if you are trying to improve your health and fitness -- in any way -- the less eating out you do, the better!  Stay at home, and cook wholesome, natural food with healthy ingredients that taste great!

Weekly Meal Plan 2/16/15 - 2/22/15

Want to get healthier?  PLAN. YOUR. MEALS!

No matter what your cooking issues are, planning out your meals (at least your dinners!) ahead of time can make the whole process much easier, so I recommend giving it a shot—even if you're just doing it with pen and paper a week ahead of time.


I use Pinterest, and an excel spreadsheet on my laptop.  It REALLY doesn't take much time at all -- especially once you get some systems like this into place.  I cannot stress enough how much easier this makes my life.


Weekly Meal Plan - 2/16/15--2/22/15:

Monday:  Shrimp & Asparagus Stir-Fry with Lemon Sauce
Tuesday:  Leftovers
Wednesday:  Egg & Vegetable Casserole
Thursday:  Spaghetti Squash with Meat Ragu
Friday:  Slow-Cooker Meatloaf with Sweet Potatoes
Saturday:  Fend-For-Yourself
Sunday:  Make-Your-Own Turkey Taco Burrito Bowls (Turkey taco meet, with homemade taco seasoning, layered with rice, veggies, black beans, salsa and guacamole. Yum!)

Weekly Meal Plan 2/9/15 - 2/15/15

Most people know how to eat healthy, and know that they should — it’s just that when it comes down to implementing this knowledge, there’s a bridge that needs to be crossed from knowledge to action.

How do you actually eat healthy, instead of just knowing that you should eat healthy?

Create a meal plan with healthy foods that you enjoy eating.

Without a PLAN, you’ll just know what to eat -- vaguely -- but you need to actually make a plan and implement it (meaning, go shopping for the foods in the plan and actually cook the foods and eat them).

THAT is the Number #1 reason why I do this.  Each and every week!

Weekly Meal Plan: 2/2/15 - 2/8/15

Well, now that I've completed the 21 Day Sugar Detox, I'll be returning to more of a 21 Day Fix-style of eating.  I'm looking forward to it!  If you are doing this program, you can always check out my 21 Day Fix Pinterest Recipe Board!

In case you're wondering, I'm still severely limited my sugar intake (only adding in a bit of stevia and some local honey), and will continue to restrict gluten from my diet.  My body just likes me a whole lot more when I do this! 

I may be a little goofy, but I love meal planning!  It really helps to make things a little easier for a busy family like ours, where we are really working to cut out processed food.  Family meals eaten at home tend to be less expensive and higher in nutrients.

Take it from me -- making the time to learn how to plan balanced meals for your family will save you time—and help you eat better—in the long run.

Weekly Meal Plan: 1/26/15 - 2/1/15

This week's meal-plan! 

I am DONE with the 21 Day Sugar Detox (as of tomorrow), but will be retaining most of the eating habits that I grew to love during these past 21 days.  Just adding a few things back in -- like honey! 

I'll be writing up my final review of the Sugar Detox early this week, so stay tuned for that.

One of my favorite things about planning meals is that it lets us enjoy variety. Instead of eating the same dish five times a week, you can plan your menu so you are always enjoying something new.

Perhaps you can cook fish on Monday, beef on Tuesday, lamb on Wednesday, a vegetarian dish on Thursday and chicken for Friday.  This is particularly helpful if you have children who are picky about their food. You can also ask for their preferences when planning meals so you can be sure they will like to dishes you serve them - I ALWAYS ask for their input!  It has really helped us to move past some of their "pickiness".



In the meantime, here is our plan for the week ahead!

Monday:  Pizza Spaghetti Squash Pie
Tuesday:  Leftovers
Wednesday:  Salsa Verde Grilled Chicken (chicken marinated in organic Salsa Verde, grilled)
Thursday:  Shrimp Tacos and Lime and Avocado
Friday:  Dinner Out with Friends
Saturday:  Mexican-Inspired Taco Pie (My Shepherd's Pie with Mexican seasonings)
Sunday:  Clean-Eats Slow-Cooker Buffalo Chicken

Weekly Meal Plan -- Week #3 of the 21 Day Sugar Detox

WOW.  Hard to believe it is the final week of the 21 Day Sugar Detox!  Let the countdown begin. 

I will be writing up my review of my second week on the Detox by tomorrow (so, stay tuned for that!), but you can read about my first week here


So, here's our plan (my plan) for this final week!:

Monday:  Mexican-Spiced Roast Chicken
Tuesday:  Leftovers (our most busy night of the week)
Wednesday:  Crispy Lemon Rosemary Chicken
Thursday:  Paleo Chili
Friday:  Italian Sausage & Peppers over "Zoodles" (I use Al Fresco Chicken Sausage)
Saturday:  Fend-For-Yourself
Sunday:  Pulled Pork Barbecue

I will also be making a few "extras".  I've found that it is best to be UBER-prepared with this, and having leftovers available for lunch every day and an occasional "not-so-sweet treat" on hand is crucial for me to stick with it.  So, I'll be making Sugar Detox Truffles, too! 

Additionally, I've been drinking my Shakeology daily, even though it isn't really 21 Day Sugar Detox "approved".  I'm okay with that, as I receive SO many other benefits from my daily dose of dense nutrition! 

AND, I also just wrapped up my second week of Insanity Max: 30 -- holy bananas!  I am a little sore.  But, getting a fabulous sweat on in just 30 minutes.  Can't beat that.

Not So Sweet .....

Meal Plan: Week of 1/5 - 1/11. 

So, with the holidays and being sick with acute bronchitis, my eating has gotten a bit off-track.  Never a good thing.  It is NOT just about the number on the scale.  My body just feels "blech".  Bloated, foggy, and inflamed.  No good!

I've also recently discovered that I am borderline hypothyroid and am experiencing nearly ALL of the classic symptoms.  My first line of attack with this is going to be to eliminate sugar and gluten from my diet and see if that is of help.

That being said, some fellow fitness friends and I are going to do a 21 Day Sugar Detox, virtually, starting tomorrow (January 5th).  Menu-planning will be key!  It always is when feeding a health family, in my opinion. 

There is a ton of info out there on the 21 Day Sugar Detox, so check it out.  Lots of guidelines, recipes, and information ...... free and online, and also there are book(s) available for purchase.

Anyway, so I've started a new recipe board on Pinterest for these recipes here.  Please be patient with me, as I'm still learning about this program, and may modify slightly for my personal health needs and my family's needs!

This Spicy Turkey Taco Burger recipe (with homemade guac -- of course), is one of our faves!

Weekly Meal Plan: 12/29 - 1/4 .... Why Wait? Starting [or keep] eating healthy NOW.

Better late than never!

I am "down for the count" with acute bronchitis right now, so NO exercise until these lungs heal.  Boo.

BUT, the one thing that I CAN control is what I eat.  So, back to the meal plan -- that always helps.  Writing it down, in one way or another, is the BEST WAY to get or stay on track!

So, here is our plan for the holiday week:



Monday: Leftovers (the boys are headed out to a hockey game tonight, sick girls will stay home)
Tuesday: Bolognese Sauce with Whole-Wheat Pasta and "Zoodles" (pulled from our freezer)
Wednesday: New Year's Eve Party (hopefully I can attend, even if just for a bit!)
Thursday: Brown Sugar and Dijon-Glazed Pork Loin with Baby Potatoes and Asparagus
Friday: Heading to a holiday party and bringing this dish - Spinach and Orzo Salad
Saturday: Italian Turkey Burger Soup
Sunday: Fend-For-Yourself

Weekly Meal Plan: Week of 12/15-12/21

Why do I "Meal Plan"?
  1. It helps us to eat healthier, as a family. When you already have a menu of the foods you're going to prepare for the next several days, you won't have to resort to eating out or ordering takeout.
  2. I grocery shop more efficiently.  This is because I already have a list of the ingredients I need even before I go the supermarket.  I know if I need bread crumbs, cumin, or cooking spray!
  3. I save money.  When we eat out less, we naturally save money.  I also stick pretty closely to my list when shopping.  I don't deviate much from the list.
  4. We get to enjoy variety!  Instead of eating the same dish five times a week, I plan our menu so that we are often enjoying something new, but yet still loving our old favorites.
  5. I can make it a "family affair".  This is particularly helpful if you have children who are picky about their food. You can also ask for their preferences when planning meals so you can be sure they will like to dishes you serve them.  They are also more likely to try NEW foods.


So, here is OUR plan for the week ahead!

Monday:  Salad with Brussel Sprouts and Grilled Chicken (Adding grilled chicken for protein.)
Tuesday:  Fend-For-Yourself
Wednesday:  Honey-Soy Baked Chicken Thighs with Brown Basmati Rice
Thursday:  Quinoa Turkey Taco Bake with a green salad
Friday:  Easy Make-Your-Own Omelet Night (Self-explanatory, right? Made with leftovers.)
Saturday:  Dinner Out (For ME, anyway .... LOL!)
Sunday:  Italian Turkey Burger Soup

AND for something a little extra, I'm making a Baked Pumpkin Oatmeal recipe for our breakfasts this week -- sounds yummy, doesn't it?

Dinner Menu Plan for the Week of 12/8-12/14

Dinner Menu Plan for the Week of 12/8-12/14

Welcome!  I hope that you find this more detailed menu-plan helpful!  It will include links to the relevant recipes for the week, in addition to a grocery list for our week. 

I am experimenting as I go here, so feedback and helpful hints are surely welcome.

If you have any questions about how I do this (I use Pinterest A LOT), please let me know.

For breakfasts, lunches, and snacks, I buy or always have on-hand the following:  plenty of fruits and vegetables, a big "box" of mixed green salad, whole-wheat bread and nitrate-free lunch meats, eggs, nuts, healthy granola/snack bars, yogurt, oatmeal, and of course, Shakeology!  We also eat plenty of leftovers for lunches.

So our dinners for the week of 12/8-12/14 will include:

Monday:  Thai Chicken & Pineapple Stir-Fry
Tuesday:  Fend-For-Yourself
Wednesday:  Spaghetti Squash Lasagna Boats
Thursday:  Vegetarian Minestrone
Friday:  Turkey Burgers & Sweet Potato Fries (I most often use Butterball Turkey Burger Patties)
Saturday:  Leftovers OR Dinner Out
Sunday:  Taco Casserole Bake (made with whole-wheat tortilla chips)

This list is the "main entrée".  I always serve the entrée with 1-2 vegetable side dishes or a large mixed green salad.
